Here is a low carb pizza to try If you are willing to have a crack at making your own pizza for the family next time. Try pulsing a whole cauliflower in your food processor or Thermomix to turn it into "cauliflower rice."
Tip out any liquid, or better still, place it in a tea towel and squeeze as much moisture from the "cauliflower rice as possible. This will ensure a good, crispy base.
Then mix with 1 egg, 1/2 sliced onion and salt, pepper, and maybe a few mixed herbs like basil, rosemary or whatever you like. Also add a teaspoon of olive oil.
Once mixed flatten it on a baking tray or pizza tray. Some folks like to grease the tray with coconut oil, but lining it with baking paper works ok too. Bake the pizza base in the oven on 180 degrees for around 20-25 mins until it becomes firm and slightly browned.
Take it out and then put your favourite toppings on. We love using basil pesto, broccoli, beans, zucchini slices, onion, mushrooms, avocado, tomatoes, but you can use whatever you want. Get the kids to help out too - they love this bit!
Pop it back in the oven for 10-15 mins, then let it cool for a few minutes, before you enjoy a long session on the couch with a good movie and a happy gut.
