Cupcake Recipe (Meat balls):
Mash 1.5kg good quality, grass fed, minced beef with two eggs, some salt and pepper to taste and a small sprinkling of chia seeds together and roll into balls of cupcake size. BBQ them on a grill until they are cooked through.
Icing Recipe (Mashed up veggies):
We put half a cauliflower into the Thermomix, but any food processor or hand masher would probably work. Add coconut milk and coconut flour until the consistency is similar to regular cake icing. I guess you could use any mashed up veggies, but we wanted a couple of light colours, so we chose cauliflower.
We added some turmeric to turn the icing yellow, and then halved the icing, and added half a blitzed up capsicum and a sprinkling of paprika to turn the other half orange. Next, if you put the two icing mixtures into a couple of zip lock bags, then snip the bottom corner off, you can probably convince the kids to decorate the top of the cakes too, just like using piping bags!
We put macadamia nuts on the top instead of cherries!
